- 250g pack ready-to-eat freekeh or spelt
- 1 lemonzested and juiced
- 1/2 red chillifinely chopped
- 1/2 tsp cumin seedstoasted and slightly crushed
- 1/2 avocadopeeled, stoned and diced
- 1/2 cucumberdiced
- a handful flat-leaf parsleychopped
- a small handful dillchopped
- 200g skinless hot smoked salmonflaked

Method
step 1
Microwave the freekeh following pack instructions then tip into a bowl and stir in the lemon zest and juice, chilli, cumin and plenty of seasoning. Leave to cool completely.

Stir in the avocado, cucumber and herbs, divide between 2 plates and top with salmon. Sprinkle more herbs to finish if you like.
