Roasted hake and veg traybake recipe

  • 500g baby new potatoes
  • 3 tbsp extra-virgin olive oil
    plus extra for drizzling
  • 1 small red onion
    cut into slim wedges
  • 350g small courgettes
    cut into chunks
  • 150g red and yellow cherry tomatoes
  • 4 chunky pieces of skinless hake
  • 1 lemon
    zested and halved
  • handful of parsley
    chopped

Method

  • step 1

    Tip the potatoes into a pan of boiling salted water, return to the boil and simmer for 8 mins. Drain well and cool.

  • step 2

    Heat the oven to 190C/170C fan/gas 5. Drizzle the oil into a large shallow roasting tin, then add the potatoes, onion and courgettes, season well and toss together. Roast for 35 mins until the courgettes and potatoes are tender and have started to colour. Stir in the tomatoes and sit the hake on top. Roast for 10 mins or until the fish is just cooked.

    To serve, drizzle over a little more oil, squeeze over some lemon juice and sprinkle over the lemon zest and parsley.
