Duck and mango rice paper rolls

Add an Asian twist to your drinks party with our easy recipe for duck and mango rice paper rolls, ready in just half an hour



  • rice paper wrappers 12
  • smoked duck breast 1 pack, approx 100g, shredded
  • mango 1, peeled stoned and shredded
  • mint 1 bunch, leaves picked
  • coriander 1 bunch, leaves picked
  • red onion 1/2, very finely sliced
  • plum sauce for dipping


  • Step 1

    Pour hot water into a bowl then drop in 1 rice paper and leave for about 30 seconds until softened. Remove and drain off the excess water with kitchen towel. Put a small pile of duck, mango, herbs and onion in the middle of the circle. Bring up the lower part of the wrapper over the vegetables and then fold one side in. Roll up into a tight spring roll. Repeat for the other wrappers. Serve with the plum sauce.
