- 200g caster or brown sugar

Put the caster or brown sugar in a pan with 100ml of water and stir over a low heat until the sugar has dissolved.

Cool completely and pour into a sterilised bottle. Keep in the fridge for up to a month. Brown sugar syrup is ideal for cocktails made with darker spirits, such as an old fashioned.
