Apple turnovers with vanilla glaze

Put a posh twist on this traditional treat with our recipe for apple turnovers with vanilla glaze. They're really easy to make and are a great comforting pud for the colder months.



  • butter 50g
  • light brown soft sugar 4 tbsp
  • cinnamon 1 tsp
  • nutmeg ½ tsp
  • allspice ½ tsp
  • dessert apples 5, 4 chopped and 1 quartered and very finely sliced
  • puff pastry 2 sheets
  • icing sugar 6 tbsp
  • vanilla paste or powder 2 tsp


  • Step 1

    Melt half of the butter in a pan with the sugar, cinnamon, nutmeg and allspice. Add the chopped apples and cook for 5-10 minutes or until the apples are tender. Cool completely.

  • Step 2

    Cut each pastry sheet into 4 rectangles and brush around the edge of each with water. Divide the spiced apple mix between them and spread it down the centre of one half of the sheet. Lay some apple slices on top of each pile of apple and fold the empty half of the pastry over, seal the edges and crimp them with a fork. Melt the remaining butter and brush the turnovers with it, chill them for 30 minutes. Meanwhile mix the icing sugar with the vanilla and enough water to make a thin glaze.

  • Step 3

    Heat the oven to 200C/fan 180C/gas 6. Cut 3 small diagonal cuts into the top of each turnover and brush half of the glaze over the pies. Bake for 18-20 minutes, leave to cool for 5 minutes, then brush over more glaze. Serve with custard or ice cream.
