What is sauerkraut?

Sauerkraut is a type of fermented cabbage. The cabbage is thinly sliced and salted, and then left to produce lactic acid. It’s this that preserves the cabbage and gives it its signature sour flavour. Sauerkraut is popular in Germany and other central European countries and is thought to be good for the gut, thanks to its natural probiotics.
