Aubergine and halloumi burgers
Make the most of aubergines by deep-frying in breadcrumbs until crisp and golden before stuffing in a burger bun with grilled halloumi and harissa mayo. Our veggie aubergine burgers are perfect for entertaining.

You can schnitz anything! This halloumi version is a textural delight, with the bouncy cheese in a crisp, golden shell served with a spicy honey and a cool crunchy slaw.

To make the slaw, toss the cabbage, onion, apples, jalapeños, lime juice and a good pinch of sea salt in a bowl. Leave for 5 mins, then add the mayo and toss again.
To make the halloumi, put the flour, egg and breadcrumbs in separate bowls. Dip each piece of halloumi in flour, then egg, then breadcrumbs until coated.
Heat a shallow pool of oil in a non-stick pan, then fry the breaded halloumi pieces on each side until golden.
Whisk together the harissa, honey and vinegar. Serve the halloumi with the slaw and a drizzle of the harissa honey, plus rocket on the side and lemon wedges to squeeze over.
