Overnight bircher muesli with cherries, peach and coconut

This recipe for overnight bircher muesli with cherries, peach and coconut is a great healthy, make-ahead breakfast if you're short of time in the mornings



  • rolled oats 125g
  • dessicated coconut 25g, plus a sprinkle extra to serve
  • coconut water 75ml
  • apple or peach or pear juice 75ml (or a similar juice with some peach in it)
  • dairy-free coconut yogurt 150g
  • agave syrup 1 tbsp, if you like
  • chia seeds 1 tbsp
  • pumpkin seeds 2 tbsp
  • cherries 150g, halved and pitted
  • ripe peach or nectarine 1, stoned and chunkily diced


  • Step 1

    Mix together the oats, coconut, coconut water, juice, yogurt, agave and chia seeds. Leave overnight, or for at least 1 hour.

  • Step 2

    To eat, stir through most of the pumpkin seeds and half the cherries (plus a splash more juice if you like it creamier). Divide between three bowls, then scatter the remaining cherries, peach and pumpkin seeds on top with a pinch more coconut and drizzle of agave, if you like.
