Christmas mojito
Try this festive twist on everyone's favourite minty cocktail, where rum is mixed with cranberry juice and soda, then garnished with mint leaves and pomegranate seeds

The coconut cream might separate a little in the glass but just give it a quick stir if it does. If you don’t like rum then swapping for blanco tequila turns this into an equally delicious coconut margarita
Spread a little icing sugar on a saucer. Rub a lime wedge around the rim of a short, chunky tumbler and dip the rim in the sugar.
Put all of the ingredients, except the garnishes, in a blender with a small handful of ice and blitz until smooth. Pour into the glass with more ice, if you like, and garnish with the berries and herbs.
