White Christmas colada recipe

  • icing sugar
  • 1 lime
    cut into wedges and juiced to make 20ml
  • 60ml white rum or coconut rum
  • 60ml coconut cream
  • 20ml sugar syrup
  • sprig of redcurrants or whole cranberries
    to garnish
  • 2 sprigs of rosemary or mint
    to garnish

Method

  • step 1

    Spread a little icing sugar on a saucer. Rub a lime wedge around the rim of a short, chunky tumbler and dip the rim in the sugar.

  • step 2

    Put all of the ingredients, except the garnishes, in a blender with a small handful of ice and blitz until smooth. Pour into the glass with more ice, if you like, and garnish with the berries and herbs.
