- 60ml amaretto
- 1 clementinejuiced, plus a twist of peel to garnish
- 50ml lemon juice
- 1 egg white or 1-2 tbsp aquafaba (optional)

Put the amaretto, clementine and lemon juices, and the egg white, if using, in a cocktail shaker filled with ice. Shake well for at least 15 seconds, then strain into a tumbler and garnish with the clementine peel.
