Toffee apple muffins

Keep a batch of these delicious toffee apple and pecan muffins ready for when only something sweet will do. They are perfect for sharing at a Bonfire Night get-together

plain flour 300g
golden caster sugar 100g 
  • baking powder 2tsp
  • bicarbonate of soda 1tsp
  • butter 100g, melted and cooled
  • eggs 2, beaten
  • milk 100ml
  • soured cream 150ml 
  • apples such as Cox’s or Worcester Pearmain 3 small (about 300g), cored and diced
  • pecans 50g, roughly chopped
  • soft toffees 100g, chopped


  • Step 1

    Heat the oven to 200c/fan 180c/gas 6 and line a 12-hole muffin tin with paper cases. Mix the wet ingredients quickly into the dry ingredients with the apples, pecans and toffee (don’t overmix – it should be a bit lumpy). Divide between the cases and bake for 25 minutes until risen and golden and cooked through.
