Ingredients
- lemon 1, mixed with 1 tbsp golden caster sugar to finish (optional)
- butter 75g, softened
- golden caster sugar 110g
- plain flour 125g
- wholemeal flour 100g
- baking powder 2 tsp
- eggs 2
- ripe bananas 4, mashed
- pecans 50g, each snapped in half
Method

Step 1
Heat the oven to 180c/fan 160c/gas 4. Beat the butter, sugar, flours, baking powder, eggs and banana together.

Step 2
Stir in the nuts and spoon into a lined and buttered 450g loaf tin.

Step 3
Bake for 50 minutes or until a skewer comes out clean. Spoon over the lemon sugar, if using.
