Halloumi Turkish Pide Recipe

Pepper and halloumi pide

Load this Turkish flatbread with diced halloumi and sweet red and green peppers for an easy vegetarian midweek meal

Ingredients

  • ciabatta bread mix 250g
  • olive oil
  • onion 1, diced
  • garlic 2 cloves, crushed
  • red pepper ½ small, diced
  • green pepper ½ small, diced
  • ground cumin ½ tsp
  • ground cinnamon ¼ ts
  • flat-leaf parsley a handful, chopped
  • halloumi 1 block, diced
  • plain flour for dusting

Method

  • Step 1

    Make the ciabatta dough following pack instructions and leave while you make the filling. 

  • Step 2

    Heat 1 tbsp of olive oil in a non-stick frying pan and fry the onion, garlic and peppers for 10 minutes or until soft. Add the spices and some seasoning, and cook for a few minutes, then stir in the parsley and take off the heat. Stir in the halloumi. 

  • Step 3

    Heat the oven to 200C/fan 180C/gas 6. Divide the dough into 4 pieces then roll out on a lightly floured worksurface into long oval shapes (about 22cm x 9cm) and put onto baking-paper-lined trays. Divide the pepper and cheese mixture between the pieces, leaving a 1cm border. Pinch at each end to make a slipper shape. 

  • Step 4

    Bake for 20-25 minutes or until puffed and golden. Brush the pides all over with melted butter and serve.
