Ingredients

  • 4 slices white farmhouse loaf or bloomer
  • 4 tbsp apricot jam
  • 4 tbsp soft goat's cheese
  • a sprig thyme, leaves picked
  • softened for spreading butter

Method

  • STEP 1

    Make 2 sandwiches with the jam and cheese, sprinkling the fillings with the thyme leaves. Butter the outsides of the bread slices then fry in a non-stick pan until golden and crisp.
