Peach, prosciutto and mozzarella salad

This peach, prosciutto and mozzarella salad is an Italian classic. The ingredients list is short, so make sure you get a really ripe, sweet peach, good-quality prosciutto and fresh mozzarella. It’s a wonderful combination of flavours.



  • peaches 2 ripe, stoned and quartered
  • prosciutto 4 slices, torn
  • mozzarella 1 ball, torn into pieces
  • rocket  2 handfuls
  • olive oil 2 tbsp 
  • lemon juice 1 tbsp
  • maple syrup ½ tbsp 
  • pine nuts 2 tbsp, toasted


  • Step 1

    Arrange the peaches, prosciutto, mozzarella and rocket on 2 plates. 

  • Step 2

    Make the dressing by whisking together the olive oil, lemon juice and maple syrup. Drizzle the dressing over the salad and scatter over the pine nuts.
