Ingredients

  • a chunk watermelon, seeds removed
  • 200g feta
  • 200g radishes, sliced
  • ½ cucumber, diced 
  • 1 bunch spring onions, including green bits
  • 2 tbsp pomegranate molasses
  • a good squeeze lemon juice
  • olive oil
  • 2 tsp cumin seeds, toasted
  • 4 pitta breads, warmed

Method

  • STEP 1

    Cut the melon and feta into chunks. Put in a bowl and add the radishes, cucumber and spring onion.

  • STEP 2

    Whisk the molasses, lemon juice, 2 tbsp olive oil and cumin and drizzle over the salad. Serve with warm pittas for scooping.
