Ingredients

  • 1 onion, peeled and grated
  • 1 clove garlic, crushed
  • 3 rashers lean back bacon, fat removed and cut into matchsticks
  • 1 tbsp olive oil
  • a good pinch chilli flakes
  • 400g tin chopped tomatoes
  • 150g bucatini or other long pasta
  • a small bunch parsley, roughly chopped

Method

  • STEP 1

    Cook the onions, garlic and bacon in the olive oil until softened (about 5 minutes). Add the chilli and tomatoes then simmer for 15-20 minutes.

  • STEP 2

    Meanwhile, cook the pasta following the packet instructions. Stir the sauce through and sprinkle on the parsley.
