Bucatini amatriciana is a classic southern Italian pasta dish made with only five ingredients, most of which you probably have it your kitchen right now. Try to find the bucatini. It is thicker than spaghetti and great for sucking up – kids love it!

  • onion 1, peeled and grated
  • garlic 1 clove, crushed
  • lean back bacon 3 rashers, fat removed and cut into matchsticks
  • olive oil 1 tbsp
  • chilli flakes a good pinch
  • chopped tomatoes 400g tin
  • bucatini or other long pasta 150g
  • parsley a small bunch, roughly chopped

  • Step 1

Cook the onions, garlic and bacon in the olive oil until softened (about 5 minutes). Add the chilli and tomatoes then simmer for 15-20 minutes.

  • Step 2

Meanwhile, cook the pasta following the packet instructions. Stir the sauce through and sprinkle on the parsley.
