Bucatini amatriciana

Ingredients
- 1 onion, peeled and grated
- 1 clove garlic, crushed
- 3 rashers lean back bacon, fat removed and cut into matchsticks
- 1 tbsp olive oil
- a good pinch chilli flakes
- 400g tin chopped tomatoes
- 150g bucatini or other long pasta
- a small bunch parsley, roughly chopped
Method
- STEP 1
Cook the onions, garlic and bacon in the olive oil until softened (about 5 minutes). Add the chilli and tomatoes then simmer for 15-20 minutes.
- STEP 2
Meanwhile, cook the pasta following the packet instructions. Stir the sauce through and sprinkle on the parsley.
