Chicken Sandwich Recipe with Greek Yogurt Guacamole

Lime and chilli chicken sandwich

Try our quick chicken sandwich for one. Coat a chicken breast in a chilli-lime marinade, cook in a griddle pan and pop in a bun with Greek yogurt guacamole, lettuce and tomato



  • olive oil
  • lime 1, juiced and zested
  • coriander a small bunch, roughly chopped
  • garlic 1 clove, crushed
  • red chilli 1, seeded
  • ginger 2cm piece, peeled and sliced
  • chicken breast 1
  • avocado ½ small, ripe
  • fat-free Greek yogurt 1 tbsp
  • bread roll 1, toasted to serve
  • lettuce and tomato slices to serve


  • Step 1

    Blitz 1 tbsp oil, half the lime juice, coriander and garlic with all the lime zest, chilli and ginger in a small blender, then season. Pour this over the chicken and leave it to marinate for 20-30 minutes. Mash the remaining garlic, coriander and lime juice with the avocado. Add the yogurt and season. Heat a griddle pan until very hot, wipe the excess marinade off the chicken and cook for 4 minutes on each side or until cooked through. Pile the guacamole into the bun, top with the chicken and add the lettuce and tomato.
