Ingredients

  • 1-2 tbsp harissa, depending on how hot it is
  • (optional) natural yoghurt to serve
  • 4 courgettes, sliced on the diagonal and fried in a little olive oil
  • a bunch coriander, chopped
  • 200g couscous, cooked following the packet instructions
  • 2 oranges, juiced and zested mixed with a splash of white vinegar and some olive oil to make a dressing
  • ½ large or 1 small roast chicken, skin removed
  • a large handful pistachios, toasted and roughly chopped

Method

  • STEP 1

    Mix the couscous, pistachios, courgettes, and most of the coriander in a bowl. Add the harissa and most of the orange dressing and toss. Heap onto plates and top with chicken and more coriander, dress with the remaining dressing. Spoon over some yoghurt and extra harissa if you like.
