Cucumber, chive and yogurt dressing

This makes a great, fresh summer dressing for grilled lamb or veg, but it goes with just about anything. Put a big bowl in the middle of the table at a BBQ and let guests help themselves.



  • cucumber 1
  • sea salt 2 tsp
  • chives chopped to make 1 tbsp
  • natural yoghurt 300g


  • Step 1

    Slice the cucumber in half and scoop out the seeds using a teaspoon. Thinly slice the cucumber and sprinkle with sea salt, set in a colander over a bowl and leave for one hour.

  • Step 2

    Rinse the cucumber slices and pat dry on kitchen paper. Mix with the chives and greek yoghurt, and season.
