Ingredients
- bramley apples 900g, thickly sliced and tossed with a little lemon juice to prevent browning
- raisins 85g, soaked in 4 tbsp Calvados (optional)
- soft brown sugar 30g
- ground cinnamon 1 level tsp
CRUMBLE TOPPING
- plain flour 100g
- porridge oats 100g
- baking powder 1 level tsp
- butter 85g, softened
- soft dark brown or muscovado sugar 140g

Step 1
Heat the oven to 180C/fan 160C/gas 4. Put the apples, raisins, sugar and cinnamon in a saucepan, then cook gently until the apples are soft and fluffy. Add a little water if necessary.

Meanwhile put the flour and oats into a large mixing bowl, sprinkle in the baking powder, then add the butter. Rub the butter into the flour and oat mixture lightly with your fingertips. When it looks crumbly and the fat has been rubbed in evenly, add the sugar and combine well with the other ingredients using your fingertips.

Spoon the apple mixture into a large pie dish (about 1.5 litres) and sprinkle the prepared crumble topping onto it. Use a fork to even it out. Cook for 30-40 minutes until the topping is browned. Serve with custard, pouring cream or vanilla ice cream.
