Orzo Salad Recipe with Feta

Orzo, feta and pepper salad

A quick, easy and colourful pasta salad of sweet red pepper, crumbled feta and fresh mint is perfect for a summer picnic, a midweek meal or a packed lunch.



  • red onion 1, halved and finely sliced
  • red wine vinegar 2 tbsp
  • olive oil
  • orzo (tiny grain-shaped pasta) 250g
  • roasted red peppers from a jar 3 sliced
  • feta 1 × 200g block, crumbled
  • pine nuts 2 tbsp, toasted
  • mint a small bunch, leaves chopped


  • Step 1

    Put the onion in a bowl, season really well and toss with the vinegar and 3 tbsp oil. Leave to marinate and soften.

  • Step 2

    Cook the orzo in salted boiling water until just tender, then drain and rinse under cold water and drain really well again. Toss with the onion and dressing then gently mix through the rest of the ingredients.
