Tomato and basil soup

Ingredients

  • onion chopped
  • carrot grated
  • celery stick chopped
  • garlic clove crushed
  • olive oil
  • chopped tomatoes 1 can
  • vegetable stock 200 ml
  • double cream 2 tbsp
  • basil handful, chopped

Method

  • Step 1

    cook onion, carrot, celery stick and a crushed garlic clove in a little olive oil, until softened. add a tin of chopped tomatoes and vegetable stock. simmer for 15 minutes.

  • Step 2

    Whizz using a blender. Stir in 2 tbsp double cream and a handful chopped basil.
