Fennel seed slaw

This colourful crunchy carrot and cabbage coleslaw with fennel-spiced mayonnaise is quick and easy to make and will go well with chicken and burgers.

Ingredients

  • mayonnaise 4 tbsp
  • red wine vinegar 4 tsp
  • fennel seeds 1 tsp, toasted
  • white cabbage ½, shredded
  • carrots 4, peeled and shredded
  • red onion 1, halved and thinly sliced

Method

  • Step 1

    Mix the mayonnaise, vinegar and fennel seeds and season really well. Toss with all the veg and leave for 20 minutes. Toss again before serving.
