This is a great way to serve a mix and match spread for friends. You can buy various raclette sets but it’s also easy to use small heatproof frying pans or dishes.


Raclette party recipe

  • 500g raclette
  • 160g parma ham
  • 180g salami
  • 200g mortadella
  • 2 small baguettes
    sliced
  • pickled onions
  • sweet or hot pickled peppers
  • cornichons

HOT HONEY PICKLED PEARS

  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • ½ tsp aleppo chilli flakes
    or other chilli flakes
  • 3 ripe pears
    cut into thin wedges

HERB AND LEMON POTATOES

  • 1.5kg ratte potatoes
  • 30g salted butter
  • 2 tbsp chopped chives
  • 2 tbsp chopped parsley
  • ½ lemon
    zested and juiced

MUSTARDY CHICORY

  • 1 tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 2 tbsp extra-virgin olive oil
  • 3 heads of red chicory
    leaves separated

Method

  • step 1

    To make the pears, mix together the vinegar, honey and chilli flakes. Put in a plastic container or food bag with the pears and mix. Leave to sit while you make everything else, giving an occasional shake.

  • step 2

    Boil the potatoes until just tender, then drain well and tip back in the pan with the butter. Toss until melted, then add the herbs and lemon zest and juice, and toss again.

  • step 3

    For the chicory salad, whisk together the vinegar, mustard and oil to make a dressing, then toss with the leaves.

  • step 4

    Put all of the accompaniments in bowls and on serving dishes.

  • step 5

    Put slices of raclette into small oven-proof frying pans or dishes then slide in a hot oven or under the grill until melted. Let everyone make their own plate then scoop a portion of cheese on top.
