Matcha is a Japanese green tea powder. It has deep cultural significance in Japan and is traditionally celebrated in tea ceremonies. It’s also now widely enjoyed in many forms around the world – these recipes highlight its earthy, grassy flavour and vivid colour.

  • 10g matcha powder
  • 2 large scoops of vanilla ice cream
  • shortbreads
    to serve (optional)

Method

  • step 1

    Whisk the matcha powder with 75ml of hot water for 2-3 mins until foamy and bright green. If you have a bamboo matcha whisk and bowl, you can use these – if not, a milk frother works well, too.

  • step 2

    Scoop the ice cream into two small dessert glasses or coffee cups. Pour half the matcha over each, then serve with shortbreads for scooping, if you like.
