Gimlet cocktail
Add a zingy burst of flavour to this easy cocktail with fresh lime juice, homemade lime syrup and mint – it's a refreshing tipple

Refreshing mint is a match made in heaven for the citrus zing of a gimlet
To make the mint and lime syrup, put the lime zest and juice and the sugar in a small pan, and heat gently until the sugar has dissolved. Add the mint leaves and cook for 1-2 mins, then turn off the heat and leave to infuse for 30-40 mins. Discard the mint leaves, then cool the syrup and store in a sterilised jar. This will make more than you need but will keep chilled for a week.
For the gimlet, put all of the ingredients into a cocktail shaker with ice and shake well until the outside of the shaker feels very cold. Strain into a chilled coupe or nick & nora glass and garnish with a mint sprig.
