Mint gin gimlet recipe

  • 50ml gin
  • 25ml mint and lime syrup (see below)
  • 25ml lime juice
  • mint sprig
    to garnish

MINT AND LIME SYRUP

  • 2 limes
    zested and juiced
  • handful of mint leaves
  • 80g caster sugar

Method

  • step 1

    To make the mint and lime syrup, put the lime zest and juice and the sugar in a small pan, and heat gently until the sugar has dissolved. Add the mint leaves and cook for 1-2 mins, then turn off the heat and leave to infuse for 30-40 mins. Discard the mint leaves, then cool the syrup and store in a sterilised jar. This will make more than you need but will keep chilled for a week.

    For the gimlet, put all of the ingredients into a cocktail shaker with ice and shake well until the outside of the shaker feels very cold. Strain into a chilled coupe or nick & nora glass and garnish with a mint sprig.
