Mediterranean tom collins recipe

  • 50ml herbaceous gin
    (try Gin Mare or Portobello Road Savoury gin)
  • 25ml lemon juice
  • 12.5ml sugar syrup
  • sparkling water
  • rosemary sprig and orange wedge
    to garnish

Method

  • step 1

    Fill a tall highball glass with ice, add all of the ingredients, except the garnishes, and gently stir. Serve garnished with rosemary and a wedge of orange.
