Chocolate tart with Baileys ice cream
Some puddings are worth spending time making. This classic rich chocolate tart with homemade boozy Baileys ice-cream makes a special dinner party dessert or a lovely pudding for a family gathering

A Christmas favourite reimagined into a fancy tart

To make the base, whizz the biscuits to crumbs in a food processor. Mix with the butter, then tip into a 36cm x 12cm baking tin and press into the base and up the sides as evenly as possible. Chill for 30 mins.
To make the filling, put all of the chocolate in a heatproof bowl. Gently warm the cream until just steaming. Remove from the heat and pour over the chocolate. Leave for a minute, then stir to combine. Stir in the orange extract and zest.
Scrape the filling into the prepared tart case, then spread out to the edges. Chill for 2-3 hrs or overnight.
To serve, carefully remove the tart from the case and put on a serving plate or board. Scatter over some pared orange zest strips, then stand for 10 mins before cutting into slices.
