Gammon with egg and pineapple chilli salsa

Ingredients
- for frying oil
- 2 gammon steaks
- 2 eggs
- 2 handfuls to serve watercress
SALSA
- 150g pineapple, diced
- 1 red chilli, finely chopped
- 1/2 small red onion, finely diced
- a handful parsley, chopped
- 1 lime, juiced
Method
- STEP 1
Mix the salsa ingredients and season. Heat a griddle to high. Oil the gammon
then season with pepper and grill for a few minutes on each side until cooked through. Fry the eggs in a small frying pan. - STEP 2
Serve the gammon with the eggs, pineapple salsa and some watercress.
