- olive oil
- 2 small red onionspeeled and cut into slim wedges
- 1 tsp golden caster sugar
- 2 tbsp balsamic vinegar
- 150g penne or other short pasta
- 75g creamy blue cheese such as gorgonzola or dolcelattecrumbled
- 1 tbsp pine nutstoasted

Heat 1 tbsp olive oil in a large non-stick frying pan. Add the onions in a single layer and cook, turning a few times until tender. Sprinkle over the sugar and balsamic then turn up the heat and keep cooking the onions until sticky and caramelised.

Meanwhile, cook the pasta following packet instructions. Drain and toss with the onions and blue cheese then scatter over pine nuts and serve.
