- 1/2 red onionfinely chopped
- 1 green chilli
- a knob butter
- 2 tsp hot or mild curry powder
- a tin baked beans
- 1 tbsp corianderchopped
- 2 baked potatoes

For a perfect jacket, prick all over, rub with olive oil and bake in a 200C/fan 180C/gas 6 oven for 1-1¼ hours.

Cook the red onion and green chilli in a knob of butter until soft.

Add the hot or mild curry powder and cook for a couple of minutes, then tip in a tin of baked beans and bring to a simmer.
