A quick pickle takes simple melon and parma ham skewers to the next level. Perfect for a Christmas or New Year's Eve canapé

- 2 tsp white wine vinegar
- 1 tbsp caster sugar
- pinch of chilli flakes
- ½ cantaloupe meloncubed
- pack of parma ham
- pack of bocconcini
- handful of basil leaves

Method
step 1
Put the vinegar and sugar in a small bowl and mix until the sugar dissolves. Stir in 2 tsp of water with the chilli flakes and melon. Leave for 1 hr or until ready to serve.
step 2
Skewer a few basil leaves followed by a piece of melon, ham and bocconcini.
