Aviation cocktail
A classic gin cocktail, made from maraschino liqueur, freshly squeezed lemon juice, a healthy glug of gin, and some chilled mineral water

This simple four-ingredient cocktail is laced with a mix of zesty and bitter flavours. It comes from London's Cajun and Creole-focussed pub-restaurant, Plaquemine Lock
Put a champagne coupe in the freezer for 10-15 mins. While the glass chills, cut two twists of rind from the orange.
Pour the gin, Cocchi Americano and Bayou Satsuma rum liqueur into a cocktail shaker with plenty of ice. Gently stir the mixture with a bar spoon so the ice begins to dissolve slightly.
Remove the glass from the freezer. Strain the cocktail into the glass. Rub one orange twist around the rim of the glass and garnish with the other. Serve.
