- 200g red quinoaor ordinary quinoa if you can't find any in health food shops
- olive oil
- 2 tbsp red wine vinegar
- 1 clove garliccrushed
- 2 tsp ground cumin
- 200g block fetacrumbled
- ½ cucumberchopped
- 150g spinachroughly chopped
- 4 spring onionsshredded

Cook the quinoa according to pack instructions. Drain well then toss with 2tbsp oil, vinegar, garlic and cumin while still warm and season. Toss through the rest of the ingredients and serve.
