Mustardy cauliflower rarebit toasts

Cauliflower florets give these rarebit toasts great texture and the mascarpone adds a delicious creamy note. Add mustard for a punch and put the toasts under the grill until browned and bubbling for a quick and easy treat.

Ingredients

  • cauliflower 1 small
  • mascarpone 4 tbsp
  • strong cheddar 100g, finely grated
  • Dijon mustard 2 tsp
  • sourdough 4 slices
  • green salad to serve

Method

  • Step 1

    Trim the stalk off the cauliflower, break off the florets and chop them roughly. Cook in simmering water for 4 minutes and drain well.

  • Step 2

    Mix the mascarpone, cheddar and mustard to a stiff paste, and mix it with the cauliflower.

  • Step 3

    Toast the bread, pile on the cauliflower and grill until browned and bubbling. Serve with green salad if you like.
