Ingredients
- wholemeal pitta bread 2
- tomatoes 2, cut into chunks
- red onion ½, sliced
- cucumber ½, cut into chunks
- olive oil
- lemon ½, juiced
- halloumi 250g, cut into chunks
- dried oregano
- houmous 2 tbsp
- natural yoghurt 75ml

Step 1
Heat the oven to 180c/fan 160c/gas 4. To make the pitta crisps, separate the pittas into 2 halves, cut into triangles and bake for 5-10 minutes until crisp.
Toss the tomatoes, onion, and cucumber with 1 tbsp olive oil and the lemon juice.

Step 2
Sprinkle the halloumi with a little oregano then grill or fry until golden. Mix the houmous and yoghurt with a little water to make a dressing and season.
Toss the halloumi with the salad, drizzle over the houmous dressing and serve with the pitta crisps.
