Ingredients
- 6 eggs
- a dash milk
- a knob butter
- 2 dollops mascarpone
- 80g smoked salmon, sliced
- 1 avocado, sliced
- a pinch cayenne pepper
Method
- STEP 1
Whisk the eggs with a dash of milk and season. Melt a knob of butter in a frying pan, then pour in the eggs and cook quickly, drawing the mixture into the centre and letting the uncooked egg run over the pan.
When the mixture is just set, add the mascarpone, smoked salmon, avocado and a pinch of cayenne and fold over. Cut in half to serve.
