Smoked salmon omelette

Make the perfect omelette. Speedy and full of protein, this breakfast is made extra special with smoked salmon, avocado and a pinch of cayenne to add a little heat.

  • eggs 6
  • milk a dash
  • butter a knob
  • mascarpone  2 dollops
  • smoked salmon 80g, sliced
  • avocado 1, sliced
  • cayenne pepper a pinch


  • Step 1

    Whisk the eggs with a dash of milk and season. Melt a knob of butter in a frying pan, then pour in the eggs and cook quickly, drawing the mixture into the centre and letting the uncooked egg run over the pan.

    When the mixture is just set, add the mascarpone, smoked salmon, avocado and a pinch of cayenne and fold over. Cut in half to serve.
