  • 6 eggs
  • oil
  • 1 red onion
    halved and sliced
  • 1 red pepper
    chopped into 2cm pieces
  • 100g goat’s cheese
  • ½ tsp paprika
  • a small handful parsley or chives
    roughly chopped

Method

  • step 1

    Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the onion and red pepper for 3-4 minutes to soften.
    Add the eggs and cook for 5-6 minutes until almost set.

  • step 2

    Dot the goat’s cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden.
    Cut into wedges and serve with salad.
