Pepper, red onion and goat’s cheese frittata

There's no excuse not to eat healthily mid-week - this recipe is ready in 15 minutes and is low GI so it won’t cause a rise in blood sugar. Serve with a slow releasing carb such as seeded bread.

Ingredients

  • eggs 6
  • oil
  • red onion 1, halved and sliced
  • red pepper 1, chopped into 2cm pieces
  • goat’s cheese 100g
  • paprika ½ tsp
  • parsley or chives a small handful, roughly chopped

Method

  • Step 1

    Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the onion and red pepper for 3-4 minutes to soften.

    Add the eggs and cook for 5-6 minutes until almost set.

  • Step 2

    Dot the goat’s cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden.

    Cut into wedges and serve with salad.
