Ingredients
- eggs 6
- oil
- red onion 1, halved and sliced
- red pepper 1, chopped into 2cm pieces
- goat’s cheese 100g
- paprika ½ tsp
- parsley or chives a small handful, roughly chopped
Method

Step 1
Beat the eggs and season well. Heat 1 tbsp oil in a small non-stick frying pan and cook the onion and red pepper for 3-4 minutes to soften.
Add the eggs and cook for 5-6 minutes until almost set.

Step 2
Dot the goat’s cheese over, then scatter the paprika and herbs over the top and slide under a hot grill for 2-3 minutes until golden.
Cut into wedges and serve with salad.
