Turkey tetrazzini

Tetrazzini is an American pasta dish with a creamy sauce and either poultry or seafood. This is our take on it using turkey, try using your Christmas leftovers.



  • Tabasco sauce
  • cooked turkey 300g, diced
  • chestnut mushrooms 200g sliced, and fried in a little butter
  • white sauce or butter or flour or hot chicken stock until smooth
  • egg 1 yolk, lightly beaten
  • dry sherry 1 tbsp
  • single cream 3 tbsp
  • spaghetti 200g, cooked following the packet instructions
  • parmesan grated to make 4 tbsp


  • Step 1

    Add a few drops of tabasco to the white sauce and whisk in the egg yolk, sherry and cream. Stir in the turkey and mushrooms. Layer the spaghetti with the sauce in an ovenproof dish, sprinkle with parmesan and grill until browned.
