Rocket soup with goat’s cheese

Peppery rocket and potato soup is topped with gooey goat's cheese in this simple recipe. The ideal lunch for two, served with crusty bread. Leave out the chicken stock to make it veggie-friendly.



  • onion 1, finely diced
  • olive oil
  • potato 1, peeled and diced
  • chicken stock 750ml
  • rocket 100g
  • soft goat’s cheese 150g log


  • Step 1

    Fry the onion gently in a slug of olive oil until it softens, add the potato and stock and bring to a simmer. Cook until the potato is soft, season well. Add the rocket and cook for 2 minutes.

    Whizz the mixture in a blender. Pour into bowls and add a couple of slices of goat’s cheese to each bowl.
