Try this griddled courgette salad, then also check out our BBQ courgettes.

  • 12 baby courgettes
    cut into long slices
  • olive oil
  • a small bunch parsley
    roughly chopped
  • 2 anchovies
    drained (rinsed if salted) and finely chopped
  • 2 tbsp capers
    fried in olive oil until very crisp
  • 1 lemon
    halved

Method

  • step 1

    Brush the courgette with oil and cook on a griddle (char-grill) on both sides until it begins to soften and char. Lay on a platter. Mix the parsley, anchovies and capers with a little olive oil and spoon over. Squeeze over the lemon juice and season.
