Charred sweet baby courgettes are tossed with fresh herbs in a simple lemon and caper dressing for a quick summer salad for any day of the week

Ingredients

  • baby courgettes 12, cut into long slices
  • olive oil
  • parsley a small bunch, roughly chopped
  • anchovies 2, drained (rinsed if salted) and finely chopped
  • capers 2 tbsp, fried in olive oil until very crisp
  • lemon 1, halved

Method

  • Step 1

    Brush the courgette with oil and cook on a griddle (char-grill) on both sides until it begins to soften and char. Lay on a platter. Mix the parsley, anchovies and capers with a little olive oil and spoon over. Squeeze over the lemon juice and season.
