Ingredients
- Camargue red rice 150g (look out for Merchant Gourmet and Gallo)
- red wine vinegar 1 tbsp
- extra-virgin olive oil 2 tbsp
- feta cheese 50g, cut into cubes
- pine nuts 1 tbsp, toasted
- carrots 2, peeled and shredded
- red onion ½ small, cut into half moons
- flat-leaf parsley 20g, finely chopped
Method

Step 1
Boil the rice until al dente, drain and rinse in cold water. Tip into a bowl and toss with the vinegar, oil and seasoning. Add the remaining ingredients, toss again and spoon into bowls.
