Finnish salmon soup (Lohikeitto) recipe

  • 1 tbsp butter
  • 1 leek
    thinly sliced
  • 1 litre fish or vegetable stock
  • 3 medium potatoes
    washed and diced
  • 2 large carrots
    sliced into thin rounds
  • 200ml single cream or milk
  • 400g fresh salmon fillets
    skinned and cut into chunks
  • large handful of fresh dill
    chopped
  • ½ lemon
    plus extra wedges to serve
  • rye bread
    sliced, to serve

Method

  • step 1

    Melt the butter in a large pot over medium heat, then add the sliced leek. Cook gently until soft and fragrant, about 5 mins – don’t let it brown.

  • step 2

    Pour in the stock, toss in the potatoes and carrots, and bring to a gentle simmer. Cook for about 10-12 mins until the potatoes are just tender.

  • step 3

    Pour in the cream. Tip in the salmon chunks and poach for 5-6 mins over a gentle heat until just cooked through and flaking.

  • step 4

    Taste and adjust seasoning, then add the fresh dill. Serve with a squeeze of lemon juice and serve with extra lemon wedges and a side of rye bread for the ultimate Finnish experience.
