Mezcal paloma
Check out this quick and easy summer cocktail recipe with mezcal, zesty limes and sweet yet slightly bitter grapefruit juice. A paloma is usually made with tequila but using mezcal instead adds a lovely smoky edge to the drink
Add ice to two highball glasses and pour in the mezcal and elderflower. Stir well, add more ice to fill up the glasses and then top up with grapefruit soda.
If you have a mini bottle with a pump, fill with rose water and spray the surface of the drink. Alternatively, add ¼ tsp of rose water to the surface of each drink and stir gently. Garnish with an edible flower, if you like, and serve. (Joia uses a rose bud to garnish this drink – it should be removed before drinking.)
