• 500g white chocolate, 
  • 2 tbsp
 coconut oil or white vegetable
 fat or crisco
  • 60g
 dried cherries
  • 150g red glace cherries, quartered
  • 100g blanched almonds, roughly chopped
  • 100g shelled and peeled pistachios, roughly chopped

  • 6 tbsp
 rice crispies
  • 8 large marshmallows, snipped into quarters


  • STEP 1

    Melt the chocolate and fat together in a microwave or bowl set over a pan of simmering water. Stir in the remaining ingredients. Scoop the mixture into a baking paper-lined 20cm square tin or baking dish (or use a silicone mould).

  • STEP 2

    Leave in a cool place or in the fridge to set. Cut into pieces to serve.
