Cherry and pistachio block

  • 12 large triangles or 24 small

This can be made up to a week ahead, provided you keep it nice and cool. Serve as a treat with coffee or as a sweet canapé. It’s frighteningly moreish, and a great one for Christmas Day dessert if you're hosting people who don't like traditional festive puddings.



  • white chocolate 500g, 
  • coconut oil or white vegetable
 fat or crisco 2 tbsp

  • dried cherries 60g

  • red glace cherries 150g, quartered
  • blanched almonds 100g, roughly chopped
  • shelled and peeled pistachios 100g, roughly chopped

  • rice crispies 6 tbsp

  • marshmallows 8 large, snipped into quarters


  • Step 1

    Melt the chocolate and fat together
 in a microwave or bowl set over a pan
 of simmering water. Stir in the remaining ingredients. Scoop the mixture into a baking paper-lined 20cm square tin or baking dish (or use a silicone mould).

  • Step 2

    Leave in a cool place or in the fridge to set. Cut into pieces to serve.
