Ingredients
- 1 packet pizza base mix, about 145g
- olive oil
- 1 clove garlic, crushed
- 400g tin plum tomatoes, drained
- ½ small ball mozzarella, sliced
- 50g rocket
- (or vegetarian alternative) to serve parmesan shavings
Method
- STEP 1
Heat the oven to 220c/fan 200c/gas 7. Make up the pizza base following pack instructions. Roll out to a large circle (about 22cm) and put on a non-stick heavy baking sheet for 10 minutes to puff up a bit.
- STEP 2
Heat a non-stick frying pan with 1 tbsp olive oil, add the garlic and cook for a minute. Add the tomatoes, season, then cook, squashing down the tomatoes with a fork until broken down and thickened. Cool.
- STEP 3
Spread the tomatoes over the pizza base and top with mozzarella. Bake for 20 minutes until puffed and golden. To serve, scatter over the rocket and parmesan shavings.
