Ingredients

  • plain flour 100g, plus extra for dusting
  • Barwheys 100g, grated
  • unsalted butter 100g, cold, cut into chunks
  • onion seeds 1 tsp
  • paprika 1/2 tsp

Method

  • Step 1

    Heat the oven to 180C/fan 160C/gas 4. Put all the ingredients in the bowl of a food processor with a good pinch of salt and pulse until they start to come together.

  • Step 2

    Lightly work the dough to bring it just together, wrap in clingfilm and chill for 30 minutes.

  • Step 3

    On a lightly floured worksurface, roll the dough to ½cm thickness and cut with a 4cm diameter cutter.

  • Step 4

    Bake on a parchment-lined baking tray for about 8-10 minutes, or until golden brown. Remove from the tray and cool on a rack.

Additional Information

Cook's note: You can substitute a good artisan cheddar for the Barwheys.
