Ingredients

  • 4 cooked gammon, thick slices
  • 100g fresh pineapple, diced
  • 1 small papaya, seeded and diced
  • 1 red chilli, finely chopped
  • a small bunch coriander, chopped
  • 1 lime, zested and juiced
  • 50g rocket leaves, to serve

Method

  • STEP 1

    Put the gammon slices on 4 plates. Combine the pineapple and papaya with the chilli, coriander, lime juice, zest and season. Mix well and spoon the salsa over the gammon. Serve with the rocket.
