Verna says, "I bet you didn't know you can make easy mochis in brownie form in just 20 mins! These are my matcha mochi brownies with white chocolate and strawberries and they’re super easy and absolutely addictive to eat.

"This method of making mochi saves you tons of time versus the Japanese guys bashing it with a hammer. This is a single-serving recipe but feel free to double up for a bigger batch."

Verna Gao's matcha mochi brownies recipe

  • 80g glutinous rice flour
  • 80g granulated sugar
  • 1 tbsp matcha powder (cooking grade)
    sifted
  • ½ tsp baking powder
  • 120ml dairy (or oat) milk
  • 40g butter
    melted, plus extra for the tin
  • ½ tsp vanilla extract
  • white chocolate
    melted
  • strawberries
    to decorate (optional)

Method

  • step 1

    Whisk together the glutinous rice flour, sugar, matcha powder, baking powder and a pinch of salt in a bowl until evenly combined. Heat your air fryer to 190C or the oven to 175C/150C fan/gas 4.

  • step 2

    Pour in the milk, melted butter and vanilla extract, then mix to a smooth batter.

  • step 3

    Lightly butter a small oven-safe dish or mini cake tin (mine was 5 x 5 inches) that fits in your air fryer, if using. Pour in the batter, smoothing the top with a spoon. Bang the dish a few times against the counter to remove any large air bubbles.

  • step 4

    Bake in the air fryer for 15 mins or in the oven for 50 mins-1 hr. The top should be slightly crisp and a toothpick inserted into the middle should come out mostly clean, with a few moist crumbs.

  • step 5

    Let the brownies cool completely before cutting. Dust with some matcha powder for the ultimate green colour. Drizzle with melted white chocolate and top with some strawberries, if you like.
